Caleb Robinson earned his Doctor of Philosophy from the University of Otago in 2022, through the Department of Human Nutrition. His thesis, titled 'Whole grains, Fibre and Health: Carbohydrate digestibility and the microbiome,' was supervised by Associate Professor Graham Eyres of the Department of Food Science. This research delved into the effects of wholegrain processing on carbohydrate digestibility and gut microbiome health, contributing to collaborations with the Riddet Institute and the Edgar Diabetes and Obesity Research centre at Otago.
During his doctoral tenure, Robinson co-authored several peer-reviewed articles advancing knowledge in nutritional science. Key publications encompass 'Gelatinisation and milling whole wheat increases postprandial glucose and insulin responses: a randomised crossover study of adults with type 2 diabetes' (Diabetologia, 2021), which examined processing impacts on glycemic responses; 'Wholegrain Particle Size Influences Postprandial Glycemia in Type 2 Diabetes: A Randomized Crossover Study Comparing Four Wholegrain Breads' (2020), linking particle size to blood sugar management; 'Create Our Own Kai: A Randomised Control Trial of a Cooking Intervention with Group Interview Insights into Adolescent Cooking Behaviours' (Nutrients, 2020); 'Immediate and Longer-Term Effects of An Intensive Adolescent Cooking Intervention on Mental Well-Being and Cooking Self-Efficacy, Attitudes and Involvement' (2019); and 'Pilot Testing of an Intensive Cooking Course for New Zealand Adolescents: The Create-Our-Own Kai Study' (Nutrients, 2018). These works explored cooking programs' effects on adolescent skills, confidence, and mental health. Robinson's PhD specifically assessed wholegrain particle size effects on breath metabolites in type 2 diabetes and normoglycaemia. He served as a teaching fellow, leading sessions like the Banana Bread Project (2018), and presented findings at the Riddet Institute Conference (2018) and International Food congress. With 90 citations, his contributions influence diabetes dietary strategies and youth nutrition. Robinson currently holds the position of Engineer Core Digital Infrastructure in the University of Otago's Information Technology Services.
