About Taiichiro

Taiichiro Seki is Professor and Dean of the College of Bioresource Sciences at Nihon University. He holds a Ph.D. and has served in progressive academic roles at the university since the early 1990s, including as Lecturer in the College of Agriculture and Veterinary Medicine, Associate Professor in the College of Bioresource Sciences from 2000 to 2010, and full Professor since 2011.

His research centers on nutrition science and health science, food sciences, and physiology, with particular emphasis on the functional properties of food components such as allyl sulfides from garlic and onion. Key areas include their effects on fibrinolysis, thrombosis prevention, liver metabolism, insulin resistance, sarcopenia, and related molecular mechanisms involving apoptosis, signal transduction, and omics analyses. Seki has led multiple Grant-in-Aid for Scientific Research projects on these topics, including studies on food functions related to exosomes and microRNA, anti-thrombotic properties of food components, and applications for sarcopenia prevention. As Dean, he oversees education and research addressing bioresources, life sciences, environmental sciences, and the One Health concept to support sustainable development and address challenges in food security, public health, and ecosystems. The college under his leadership reorganized its curriculum in 2023 to integrate advanced expertise in bioresource sciences and veterinary medicine.
