About Alberto

Dr. Alberto Baldelli is a Senior Lecturer in the School of Agriculture and Food Sustainability at the University of Queensland, where he joined in 2024. He is also affiliated with the Queensland Alliance for Agriculture and Food Innovation. He holds a PhD in Particle Engineering from the University of Alberta, as well as a Masters (Research) of Engineering in Production from the Università degli Studi di Brescia. Prior to his appointment at the University of Queensland, Dr. Baldelli completed a Postdoctoral Fellowship and a Research Fellowship at the Faculty of Food and Land Systems at the University of British Columbia.

Dr. Baldelli specializes in particle engineering applied to food technology, with particular focus on spray drying, encapsulation of bioactive compounds, spray coatings, food fortification, nasal delivery, dry powders, powder technology, and particle technology. His research interests also encompass packaging through spray coating and sustainable films, as well as drug delivery including nasal delivery and nose-to-brain delivery of GLP-1 peptides. He has authored or co-authored numerous publications, including recent works such as "Locking in flavor: Aroma chemistry and spray drying encapsulation strategies for stable food applications" (2026, Food Chemistry), "Spray drying encapsulation of β-carotene with cellulose nanocrystals: improved stability and controlled release under varying wall-material compositions and inlet temperatures" (2026, Journal of Food Engineering), "Spray drying vitamin B12: Innovations in encapsulation for functional foods" (2025, Trends in Food Science and Technology), and "Optimizing microalgae bioprocessing and digestibility: spraying techniques for drying and encapsulation" (2025, Food Bioscience). Dr. Baldelli supervises multiple PhD and Master's projects and contributes to advancements in dry powder applications for the food and pharmaceutical industries through spray drying techniques that enable control over particle properties, encapsulation for target delivery, and preservation of bioactive compounds.
