Rate My Professor Elizabeth Dunford

Elizabeth Dunford serves as Adjunct Assistant Professor of Nutrition at the University of North Carolina at Chapel Hill. She earned an undergraduate degree in Human Nutrition, a Master’s degree in Public Health, and a PhD in Public Health from the University of Sydney. Following her doctoral studies, she completed a postdoctoral research fellowship at UNC Chapel Hill from 2015 to 2018. Her academic appointments also include Senior Lecturer in the Faculty of Medicine at UNSW Sydney and Project Consultant in the Food Policy Division at The George Institute for Global Health.

Dunford’s research centers on monitoring the global food supply, assessing the nutritional quality of packaged foods and beverages, and informing food policy. She led development of the Australian and US FoodSwitch food composition databases and the associated smartphone application, which has been downloaded more than one million times across multiple countries. Her peer-reviewed publications, exceeding 100 in total, address topics including ultra-processed foods in baby and toddler products, synthetic dyes in US packaged foods, disparities in ultra-processed food purchases, sodium reduction in household purchases, and non-nutritive sweeteners across countries. Representative works include studies published in the Journal of the Academy of Nutrition and Dietetics (2025 and 2023), Public Health Nutrition (2025), Nutrients (2024 and 2018), The Lancet Regional Health – Americas (2024), and the Bulletin of the World Health Organization (2023). She has authored commissioned policy documents for the World Health Organization, the Access to Nutrition Initiative, the World Bank, and UNICEF. Her contributions support international efforts to improve food environments and public health nutrition outcomes.
