Gabrielle Caroline Peiter is a professora substituta in the Curso de Medicina at Universidade Federal do Paraná, Campus Toledo, where she teaches in the areas of Histologia, Biologia Celular, and Genética. She earned a bachelor's degree in Ciências Biológicas from Universidade Paranaense (UNIPAR) in 2015 and a full teaching license in Química from Universidade Tecnológica Federal do Paraná (UTFPR) in 2019. She completed a master's degree in Tecnologia de Bioprodutos at UFPR in 2017 and a doctorate in Bioquímica e Biologia Molecular at UFPR in 2023. She is currently undertaking postdoctoral research in the Programa de Pós-Graduação em Processos Químicos e Biotecnológicos at UTFPR, contributing to research groups focused on biomaterials, bioprodutos, and health.

Her scientific work centers on the development and characterization of vitreous materials and antimicrobial hydrogels, the evaluation of biological activity of natural extracts and nanoparticles, and in vitro assays involving fungi, bacteria, and cell cultures, as well as animal models for toxicity and wound healing. She employs chromatographic and spectroscopic techniques for bioactive compound analysis and applies in silico and structural bioinformatics approaches to study proteins and potential pharmaceuticals. Peiter also engages in extension projects for scientific dissemination and knowledge popularization, coordinating initiatives such as the Ciência em Rede project and the Labmates channel. She has received academic awards and recognitions, including the 25 Mulheres na Ciência América Latina 2025 distinction from 3M for her contributions to science and innovation.
