Kristi Cammack serves as Assistant Dean of West River Operations and Director of SDSU West River Research and Extension in Rapid City for the College of Agriculture, Food and Environmental Sciences at South Dakota State University. She is also Professor and Director of the Center of Excellence for Bison Studies. An SDSU alumna, Cammack earned her B.S. in Animal Science from South Dakota State University, M.S. in Animal Science from the University of Nebraska-Lincoln, and Ph.D. in Animal Science from the University of Missouri. Prior to joining SDSU in 2016 as Director of the West River Ag Center, she spent ten years as a faculty member in the Department of Animal Science at the University of Wyoming, researching and teaching livestock breeding and genetics. In her current roles, she facilitates research and outreach in West River South Dakota, advancing bison knowledge and livestock production.
Cammack leads the Center of Excellence for Bison Studies, launched in 2020 with the National Bison Association, serving as a hub for bison research, education, and outreach. She oversees projects such as Developing Resilient Beef and Bison Commodities and manages SDSU field stations including the West River Research Farm. Her scholarly contributions include the publication 'The role of the rumen microbes in livestock production' (2018, cited extensively), 'Influence of Grain- and Grass-Finishing Systems on Carcass Characteristics of Cull Beef Cows' (2021), and 'Influence of Maternal Carbohydrate Source (Concentrate- or Roughage-based) on Progeny Growth Performance, Carcass Characteristics, and Rumen Microbiota' (2021). Cammack has presented sessions at the National Bison Association conference, contributed to the Animal Science Research and Extension Report, and participated in faculty excellence celebrations at SDSU. Her work supports South Dakota citizens through extension services in livestock production and promotes resilient commodities in the region.
