Dr. Tan Seok Tyug is a Senior Lecturer at the Jeffrey Cheah School of Medicine & Health Sciences, Monash University Malaysia. She is a registered nutritionist who holds a PhD in Nutritional Sciences and a BSc (Hons) in Nutrition and Community Health, both from Universiti Putra Malaysia. Her professional appointment at Monash University Malaysia dates from 2009 to the present. Dr. Tan's research specializations encompass food security, eating behaviour, nutritional status of various populations, nutrigenomics, bioactive compounds, and non-communicable diseases. Her scholarly efforts contribute to United Nations Sustainable Development Goals 2 (Zero Hunger) and 3 (Good Health and Well-being).
Dr. Tan has authored or co-authored 67 research outputs, including 49 journal articles, 14 book chapters, 3 reviews, and 1 short survey. Key publications include "Bioactive Phytochemicals from Bell Pepper (Capsicum annuum) By-Products" (2025), "Bioactive Phytochemicals from Onion (Allium cepa L.) By-Products" (2025), "Cinnamon as a thickening and flavoring ingredient" (2025), "Food Fussiness, Fresh Fruit and Vegetable Consumption, and Their Correlations With Anthropometric Indices in Children" (2025), and "Food Safety Knowledge, Attitudes, and Practices of Adults in Malaysia During the COVID-19 Pandemic" (2025). She holds editorial positions as Associate Editor for Nutrition and Health (Sage, since 2022) and Editorial Board Member for Dialogues in Health (Elsevier, since 2022), Societal Impacts (Elsevier, since 2023), and Discover Social Science and Health (since 2024). Dr. Tan is accepting PhD students.
