He completed his BSc (Hons), MSc, and PhD in pig nutrition at the University of Sydney between 2006 and 2011, with his doctoral research focusing on the effects of dietary fatty acids and the dietary n-6:n-3 polyunsaturated fatty acid ratio on pig growth performance. Following his PhD, Wilkinson served as a Postdoctoral Research Associate at the University of Sydney's Poultry Research Foundation. Since 2014, he has held the position of Technical Services specialist in monogastric nutrition at Feedworks Australia, where he provides extensive consulting services across the pig and poultry industries. He maintains active involvement in academic research collaborations, particularly with the University of New England, contributing to studies on poultry production and nutrition.

He is widely published in peer-reviewed journals and has delivered invited presentations at local and international animal nutrition conferences. Notable publications co-authored by Wilkinson include 'Black soldier fly larvae in broiler diets improve broiler performance and modulate the immune system' (de Souza Vilela et al., Animal Nutrition, 2021), 'The Response of Layer Hen Productivity and Egg Quality to an Additional Limestone Supplement' (Ruhnke et al., Animals, 2021), 'Precision feeding and precision nutrition: a paradigm shift in broiler feed formulation?' (Moss et al., World's Poultry Science Journal, 2021), 'Guanidinoacetic acid as a partial replacement to arginine supplementation in broiler diets' (Sharma et al., Poultry Science, 2022), and 'Evaluation of Precision Feeding to Enhance Broiler Growth Performance' (Nawab et al., Animals, 2025). Wilkinson exerts significant influence in the field through various committee roles, including Council Member of the Poultry Research Foundation at the University of Sydney, Industry Committee Member of Poultry Hub Australia, Committee Member of the Australasian Pig Science Association, Education Advisory Committee Member of the Australasian Pig Research Institute Ltd (APRIL), and Committee Member of the Australian Poultry Science Symposium.
