Demonstrating skills from her engineering background, Tracey Adamson utilizes 3D modelling software to create custom moulds and cutters for her sugar art creations. Her journey in this craft began nearly 20 years ago when she crafted a Transformer cake for her son's fifth birthday, prompting her to purchase supplies, source edible icing sheets from America, and attend classes at Logan Park High School on cake decorating, icing techniques, and food safety. Invited by her instructor, a founding member, she joined the Highland Sugar Art Club in Dunedin and now serves as its President. Competing nationally with the New Zealand Cake Decorators Guild, she earned second place in 2013 with an edible fabric entry for a World of Wearable Art theme, third place in 2014 in a plaque competition themed 'under the sea,' second place in 2016 with a crochet sun hat cake, and first place in 2017 in the 'anything goes' category for a kiwi bird fishing for whitebait, which took approximately 1,000 hours using gelatine for feathers and eyes, and modelling chocolate for the beak and shoes. Other works include gender reveal cakes featuring swans in wafer paper, collaborative dog-themed plaques by club members, and gum paste flowers such as peonies, gloriosa lilies, water lilies, and corsage sprays made with her secret recipe for flexible gum paste to achieve realistic effects.
