About Usha

Dr. Usha Singh serves as the Dean of the College of Community Science and Professor in the Department of Food Science and Nutrition at Dr. Rajendra Prasad Central Agricultural University, Pusa, Samastipur, Bihar, a position she has held within the institution since joining as faculty in 1989. Her academic qualifications include a B.Sc. in Home Science from Rajendra Agricultural University, Pusa; M.Sc. in Home Science (Food and Nutrition) from Marathwada Agricultural University, Parbhani, Maharashtra; and Ph.D. in Home Science from Babasaheb Bhimrao Ambedkar Bihar University, Muzaffarpur, completed in 1996.

Specializing in food science, food processing, maize nutrition, malnutrition reduction targeting children, adolescents, and women, nutrition security, food preservation, value chain development, and product development, Dr. Singh has made significant contributions to agricultural nutrition. She has published 105 research papers, 3 books, 8 book chapters, and various training manuals and folders. Notable publications include "Integrated multisectoral strategy to improve girls’ and women’s nutrition before conception, during pregnancy and after birth in India (Swabhimaan)" (2019, British Medical Journal), "Prevalence of food consumption and diversification among people having lifestyle diseases" (2022), "Effect of changes in Zinc and phytic acid content in maize under various process in bioavailability of zinc" (2018), "Impact of supplementation of Quality Protein maize based ladoos on the nutritional status of pregnant women" (2004), and studies on redgram storage from the 1990s. Dr. Singh holds three patents granted between 2022 and 2023 for innovations in grain processing and nutritive food formulation. Her accolades include the Commonwealth Fellowship (1997), ICAR-initiated Best Teacher Award (2001), two Personal Academic Promotion Awards (2002, 2003), Certificate of Merit (2005), Reviewer Excellence Award (2016), and CHAI Appreciation and Fellow Awards (2018). She has served on the Maize Task Force of the Government of Bihar and consulted for the governments of Bhutan and Bangladesh on maize-based foods. Dr. Singh has also participated in international trainings in the Netherlands, Sri Lanka, China, Thailand, and Bangladesh.
