What E622 actually is and why it shows up on labels
Monopotassium glutamate, better known by its E number E622, is the potassium salt of glutamic acid. It works exactly like its more famous cousin monosodium glutamate (E621) as a flavour enhancer that delivers that savoury, meaty taste called umami. Food manufacturers reach for it when they want to cut back on sodium but still need the same punch in soups, snacks, processed meats and ready meals. It is listed on ingredient panels in the EU and elsewhere as a permitted additive.
Reported reactions people actually notice
Some diners describe a cluster of short-lived symptoms after eating foods heavy with added glutamates. Headache, flushing, sweating, a tight feeling in the face or chest, tingling, nausea or a rapid heartbeat can appear within an hour or two. These are often lumped together as MSG symptom complex, even though E622 is the potassium version. The symptoms tend to be mild and fade on their own. Nobody tells you this part: the reactions are most commonly reported when someone consumes several grams on an empty stomach rather than as part of a normal meal.
What the big safety reviews actually concluded
The European Food Safety Authority re-evaluated the whole family of glutamic acid and its salts (E620 to E625) in 2017. They found no genotoxicity concerns and no adverse effects in the available animal studies at doses relevant to human use. From a neurodevelopmental study they set a group acceptable daily intake of 30 mg per kg body weight per day, expressed as glutamic acid. At the same time the panel noted that some population groups could exceed that level under current maximum permitted use rules and suggested the European Commission look at tightening those limits. Across the Atlantic the U.S. Food and Drug Administration continues to list monosodium glutamate as generally recognised as safe, and the same logic applies to the closely related potassium salt. Large reviews have not turned up consistent evidence linking normal dietary amounts to long-term problems such as brain damage or metabolic disease in humans.

Where the animal data and human experience part company
High-dose rodent studies sometimes show changes in weight, metabolism or even nerve cells, but those doses are far higher than anything a person would eat in food. When researchers try to reproduce the same effects in people using realistic amounts mixed with meals, the results usually disappear. My own early reading of those papers left me convinced the sky was falling; then I sat down with the actual exposure numbers and realised how quickly the gap between lab and lunchbox opens up.
Who might still want to pay attention
A small percentage of people appear genuinely sensitive. For them even moderate amounts can trigger the familiar flushing or headache. If you have asthma or chronic hives, a few older case reports suggest checking whether added glutamates play a role, though controlled trials have not confirmed a broad link. The practical test is simple: keep a food diary for a week or two and see whether symptoms line up with meals that list E622 or similar additives.
Reading labels without losing your mind
Manufacturers must declare added monosodium glutamate by name, but E622 and the other glutamates often appear under their E numbers or as “flavour enhancer”. Naturally occurring glutamate in tomatoes, cheese or mushrooms does not count as an additive and does not trigger the same regulatory rules. If you are trying to reduce intake, focus on the processed items that list the additive explicitly rather than swearing off every savoury food on the planet.

Bottom line from the evidence so far
Current scientific consensus holds that E622 is safe for the general population at the levels normally found in food. Sensitive individuals may notice short-term effects, especially at higher doses without other food. Regulatory bodies continue to monitor exposure and have already flagged the need to keep total intake in check for some groups. The story is less dramatic than the headlines from twenty years ago, but it is also more useful once you separate the lab extremes from everyday plates.
