Penny Knight is an Associate Professor in Medical Assisting in the Health Science department at Palm Beach State College. As Program Director, she oversees the Medical Assisting Advanced Associate in Science (AS) degree program (65 credit hours over two years) and the Medical Assisting Specialist College Credit Certificate (CCC) program (44 credit hours over 15 months), offered at the Lake Worth and Loxahatchee Groves campuses. These programs deliver comprehensive training in administrative and clinical competencies essential for ambulatory care settings. Students under her leadership master medical terminology, anatomy and physiology, pathophysiology, basic accounting, insurance processing and coding, electronic health records, laboratory techniques, clinical procedures, pharmacology, medication administration, first aid, patient assessment, injections, phlebotomy, vital signs measurement, and electrocardiography. The rigorous curriculum prepares graduates to pursue certification as Certified Medical Assistants through the American Association of Medical Assistants.
Knight holds a Master of Science in Business Administration and Management from Husson University and a Bachelor of Arts in Clinical Laboratory Science/Medical Technology from the University of Maine. Prior to her current role, she served as Faculty at Northern Maine Community College from 2010 to 2018. Demonstrating excellence in pedagogy, she completed the ACUE Effective Online Teaching Practices course in 2023, earning a nationally recognized credential co-endorsed by the Association of College and University Educators (ACUE) and the American Council on Education (ACE). Knight was honored at a pinning ceremony on January 26, 2024, at the Public Safety Training Center on the Lake Worth campus, joining 114 other Palm Beach State College faculty in this achievement. Her contributions support limited-access admissions processes and career preparation in healthcare.
