Sara Richardson has been associated with the Department of Human Nutrition at the University of Otago, where she served as a supervisor for postgraduate students. In 2022, she supervised Alice Young, a Master of Applied Science (Advanced Nutrition Practice) student undertaking a six-month placement at the Department of Human Nutrition Student Nutrition Clinic. Richardson assigned the student to provide nutrition support to a four-person University of Otago-sponsored team competing in the GODZone Adventure Race, which involved developing tailored nutrition strategies to address the event's extreme physiological and psychological demands, including high energy expenditure, sleep deprivation, and consumption of carbohydrate-rich foods in remote terrain. She is also affiliated with the Department of Human Nutrition through her co-authorship of the 2011 research paper titled 'Age-related differences in postprandial glycaemia and glycaemic index,' published in the journal Age and Ageing. The study examined glycaemic responses to test meals in younger and older adults, finding lower postprandial glucose concentrations in older participants. Currently, Sara Richardson holds the position of Change Manager in the Human Resources Division at the University of Otago, focusing on change management and organisational design.
