Residential & Dining Enterprises (R&DE), the largest auxiliary organization at Stanford University, supports the academic mission of the university by providing high-quality services to students and other members of the university community. R&DE has an annual operating budget of $400M, operates 24/7/365, and oversees a $3B asset portfolio comprising over 7 million square feet--one-third of the campus footprint. This fixed term position is scheduled to end June 30, 2026 with the possibility of extension.
This role is designated as essential and requires incumbents to report to work onsite. Telecommuting is not available for this role.
SUMMARY OF POSITION:
- Work with students, faculty, staff, and guests to assess dietary needs and provide appropriate dining accommodations.
- Provide virtual and in-person nutrition education and/or counseling to students with diverse nutritional needs (e.g., food allergies, vegan/vegetarian diets, religious diets, eating disorders, low-FODMAP, medical conditions, healthy diets, etc.), documenting recommendations, and providing follow-up
- Maintain Food Allergies @Stanford membership and communications.
- Coordinate with internal and external campus collaborators to communicate the needs of students with Food Allergies, religious dietary requirements, or medical nutrition needs and develop collaborative solutions to meet these needs.
- Represent the Eat Well @Stanford and Food Allergies @Stanford programs to campus and non-campus stakeholders, acting as primary liaison for these programs and providing campus-wide leadership in advancing healthy and inclusive nutrition programs for students.
- Evaluate the Eat Well @Stanford and Food Allergies @Stanford programs through regular data collection and analysis (i.e., audits, assessments, and surveys) to ensure continuous quality improvement for inclusive nutrition programs.
- Conduct regular nutrition, food allergy, and special diet trainings for all staff (including casual, bargaining unit, culinary, management, and support staff)
- Manage and provide oversight of all ingredients, allergens, and dietary data in Eatec and Stanford Dining menu and labeling system, ensuring that menu, ingredient, allergen, and dietary information is accurately communicated on menus, labels, and online.
CORE DUTIES:
- Plan and design meals for individuals and student populations to ensure nutritional standards are met.
- Plan, design, implement, and oversee dietary interventions and assessment activities, and document changes against baseline.
- Provide nutritional education and/or counseling to research participants, chefs, students participating in health-education classes and students with nutritional needs.
- Develop programs to meet individual needs and nutritional goals.
- Participate in cross-campus teams, panels, committees and working groups engaged in health education programs.
- May supervise other professional staff.
- Evaluate and analyze data, document individual and program results in accordance with federal and state requirements, and review documents maintained by subordinate staff
- Identify and resolve complex nutritional-related problems associated with delivery of inclusive nutrition programs, from development and implementation through documentation of results.
MINIMUM REQUIREMENTS:
Education & Experience:
Bachelor's degree required. Master's degree (preferred) in clinical nutrition, food and nutrition, health sciences, or related discipline and five years of relevant experience or combination of education and relevant experience.
Knowledge, Skills and Abilities:
- Demonstrated ability to convey nutritional concepts to individuals of varying ages and cultural backgrounds.
- Verbal skills to conduct interviews and present nutritional concepts.
- Demonstrated ability to handle confidential information (verbal and written) with tact and diplomacy.
- Written English skills to document nutritional assessments.
- Ability to assess individual nutritional needs based on age, weight, physical activity, and general health.
Certifications and Licenses:
- Current Registered Dietitian Certificate.
- Registered Dietitian and member of the American Dietetic Association.
PHYSICAL REQUIREMENTS:
Frequently perform desk-based computer tasks, sit, and grasp lightly/fine manipulation, writing by hand.
Occasionally stand/walk, use a telephone, sort/file paperwork or parts, lift/carry/push/pull objects that weigh up to 10 pounds.
Rarely kneel/crawl, climb (ladders, scaffolds, or other), twist/bend/stoop/squat, reach/work above shoulders, grasp forcefully.

The expected pay range for this position is $106,000 to $115,000 per annum.
Stanford University provides pay ranges representing its good faith estimate of what the university reasonably expects to pay for a position. The pay offered to a selected candidate will be determined based on factors such as (but not limited to) the scope and responsibilities of the position, the qualifications of the selected candidate, departmental budget availability, internal equity, geographic location and external market pay for comparable jobs.
