The Registered Dietitian supports campus-wide wellness and nutrition initiatives by leading educational programs, managing nutrition and menu information systems, and providing individualized nutrition counseling to students and community members. This position delivers Medical Nutrition Therapy (MNT) for students and members of the monastic communities, serves as a primary point of contact for customer relations regarding nutrition and wellness, and contributes nutritional expertise to other areas of Culinary Services, including retail, catering, concessions, and kitchen operations as needed.

The posted wage represents CSB and SJU's good faith estimate of likely compensation at the time of posting. Actual pay will be dependent upon several factors, including the candidate's experience, qualifications, and skills, and may fall outside of the range indicated.
Culinary Management
- Provide training and professional development opportunities for students and staff, emphasizing diet and nutrition.
- Monitor and respond to customer comments and concerns to enhance satisfaction and promote understanding of nutrition services.
- Lead the Culinary Task Force Committee - work with students to gain feedback about our menus, services and operations
- Collaborate with Student Accessibility Services to support students with medically necessary dietary accommodations.
- Maintain and enforce sanitation and safety standards in accordance with institutional policies and local, state, and federal health regulations.
- Track and ensure necessary training is completed by all Culinary Services employees.
- Assist in evaluating and improving processes and procedures within campus dining centers to ensure efficient, effective and sustainable operations with minimal waste and redundancy.
- Assist in other areas of Culinary Services based on staffing and special event needs.
Department Wellness & Nutritional Education Programs
- Coordinate wellness and nutrition education programs, oversee nutrition outreach, and create engaging communications (newsletters, dining hall materials, and social media content) that promote healthy eating and increase awareness of current nutrition trends across the campus community
- Continuously enhance the allergy-free and special diet self-service options in dining centers to ensure accessibility and inclusion for all guests.
- Promote and provide training on the use of the online menu system for students and community members.
- Collaborate with campus partners to promote National Nutrition Month and other student-focused wellness initiatives.
- Serve a resource for campus partners, student groups and visitors providing nutrition education.
- Partner with culinary staff to understand challenges and develop new menu items and recipes that support guest needs and emphasize nutritious dining options.
- Provide leadership, guidance, and structure for Student Nutrition Assistants.
Manage Nutrition and Menu Information Systems
- Assist students in identifying ingredients and recipes to support informed dining choices.
- Maintain accurate and up-to-date ingredients and nutritional information within the menu management system.
- Support the menu management system for all operations in the absence of the Menu Coordinator.
- Communicate with vendors and food companies as needed to ensure the accuracy of nutritional databases.
- Serve as the primary liaison for students and guests with special dietary needs, including food allergies.
- Conduct individualized nutrition consultations and develop personalized care plans to help students effectively utilize meal plans and navigate campus dining options.
Well-Being Center
- Assess, counsel, educate, and develop individualized nutrition plans for patients requiring dietary modifications to treat or prevent disease.
- Provide one-on-one Medical Nutrition Therapy (MNT) to students by appointment.
- Serve as a clinical nutrition resource for Counseling and Health Services staff.
- Support Health Promotion staff in programs and initiatives related to nutrition and wellness.
- Create and present outreach to campus partners (athletics, nutrition, nursing, etc.)
Other Duties
- Ensure compliance with all professional, ethical, and regulatory standards governing dietetic practice, including HIPAA, FERPA, and applicable licensure or credentialing requirements.
- Engage in continuing education to maintain professional credentials and stay current on best practices in college health and nutrition.
- Participate in relevant professional organizations or campus networks related to dietetics, health, and wellness.
- Perform other duties as assigned by Executive Directors.
Minimum qualifications:
- Bachelor's degree in Food and Nutrition, Dietetics, Nutritional Science, or a related field.
- Registered Dietitian Nutritionist (RDN) credential through the Commission on Dietetic Registration.
- Experience in nutrition education, counseling, or a related area.
- ServSafe certification or the ability to obtain certification within six months of employment.
- Strong oral and written communication skills, with the ability to work effectively and collaboratively with diverse groups in team settings.
- Excellent organizational and problem-solving skills, including the ability to prioritize tasks, meet deadlines, and take initiative.
- Demonstrated ability to engage customers and uphold high service standards to ensure a positive experience.
- Proficiency in using office and data management software to generate reports, organize information, and monitor results.
Physical requirements:
- Ability to perform essential job functions, with or without reasonable accommodations.
- Significant keyboard and computer use, prolong sitting, and occasional standing.
Travel requirements:
- Regular travel between the campuses of the College of Saint Benedict and Saint John's University.
