Offer Description
Activities and context: At the core of the project is the assessment of how different protein extraction processes from various nuts affect the structure, techno-functional properties, and nutritional characteristics of the resulting protein ingredients. The fellow will focus on investigating the digestibility of proteins in the different protein ingredients. In addition, the fellow’s scope of work will include assessing potential differences in the cytotoxicity of the protein ingredients obtained.
Mandatory requirements: The candidate must hold a PhD in Food Science or a related field. The candidate must have demonstrated experience in: (i) applying the INFOGEST standardized in vitro digestion protocol; (ii) processing proteomics and/or peptidomics data, with proficiency in in silico peptide analysis platforms; and (iii) applying basic analytical techniques for the chemical characterization of proteins. The candidate must meet the requirements established by FAPESP for the post-doctoral fellowship (https://fapesp.br/en/postdoc).
Desirable requirements: Experience conducting assays using the Caco-2 cell model (or another suitable cell model) to evaluate cellular responses, such as cytotoxicity, is desirable.

This opportunity is open to candidates of any nationality. The selected candidate will receive a FAPESP Post-Doctoral fellowship in the amount of R$ 12,570.00 monthly and a research contingency fund, equivalent to 10% of the annual value of the fellowship which should be spent on items directly related to the research activity.
